Age
Doc Hudson is 55 years old in the movie. This should be added to the article (maybe). The reason he is 55 is because the movie takes place in 2006. Doc is a 1951 Hornet, which makes him, at most, 55. Because Doc was alive during 1951, that makes him 55 years old.
But maybe I'm wrong, because that would make Sally, at most, 4 years old. Any comments?
Unless specifically stated in Disney/Pixar media, we will not be adding ages to these articles.

We do have his age, if he's based on
Herb Thomas - born on April 6, 1923 and lived to age 77 (in 2000). We also have Sally's age (she's Dawn Welch, owner of the
Rock Café since 1993, born January 1969 - which makes her 23 or 24 when she bought the place). The one catch is that, in the real world, driver and vehicle are two separate entities and have two separate dates of birth or manufacture... unlike Cars where both are integrated as one entity. Pixar's tendancy to combine multiiple NASCAR, US66 or automotive entities into one Cars character also complicates this... if there were three Fabulous Hudson Hornets with three drivers and pit crews, there are three different ages for drivers even if the vehicles are closely matched.
As such, his age must be worded as "a 1951 Hudson Hornet" who is "based heavily on Herb Thomas (1923-2000) and two others".
