If the Dutch won the 3rd Anglo-Dutch war, how come they lost New Amsterdam ?

They traded the recaptured New Amsterdam for the English recognizing Dutch sovereignty over Suriname. English colonization had swamped New Amsterdam, so the Dutch decided that they'd rather solidfy their claim on a profitable colony. —
